Nando's Style Chicken

I'm going to post a recipe of Nando's restaurant style chicken with my own twist to it. It is prepared by marinating the chicken pieces in a sauce called Peri Peri Sauce.

I'm using 4 pieces of chicken (drumstick piece with the thigh attached to it) and the ingredients are for 4 pieces. I prefer to keep the skin on it. It yields more taste.

I've added the sauce remaining from the tray onto the chicken in the picture above. 

Ingredients Required


For the Peri Peri Sauce:
Oil
Red Vinegar (25% of oil used)
Red Bell Peppers or Red Capsicum - 1 if large and 2 if small
Salt
Red Chilli Powder
Garlic - 8 to 10 cloves
Thyme (dried or fresh) - Karpooravalli leaves can also be used instead
Parsley and/or Corriander leaves
Oregano (optional)
Dried Red Chilli Flakes
Fresh Red Chillies or Green Chillies - 6 to 8 (as required)
Fresh Lemon Juice - 1/2 lemon

For Marinating the Chicken:
Salt
Pepper
Peri Peri Sauce (which we are about to prepare)


Preparation


Step 1: Marinate the cleaned Chicken pieces by rubbing it with some salt and pepper. Keep it aside until we prepare the Peri Peri sauce.

Step 2: Take all the ingredients for the Peri Peri sauce in a blender and blend it into a fine sauce. 

Step 3: Now prepare a baking tray by wrapping it with aluminium foil sheets and coat it with some oil. 

Step 4: Pour some of the Peri Peri sauce over the chicken pieces in a bowl and give it a mix. Now place the chicken pieces over the tray and pour some of the sauce over it. 

Step 5: Cook in a microwave oven at 180 degree Celsius for 15-20 mins on each side. Pour some sauce after flipping the piece, if required. Total cooking time takes up to 30-40 mins. 

This will give you a delicious chicken with meat falling off the bone... It is very juicy too. Try not to overcook it as the meat becomes hardened after a point.
